Fresh Summertime Desserts ~ Strawberry Cantaloupe Cupcakes

It's my favorite time of year. With the excitement of school ending in less than two weeks, I can't wait to start sleeping in, going to the beach, reading, volunteering, and of course, bake. Summer is just around the corner!

To start off the season, I whipped up a batch of a brand new, fun, unique dessert: Strawberry Cantaloupe Cupcakes! Topped with a vibrant swirl of frosting, fresh fruit and festive sprinkles, these fluffy cakes are a perfect way to celebrate the coming of summer! Keep reading for the recipe!

Strawberry Cantaloupe Cupcakes

1/2 cup butter
3/4 cup sugar
2 eggs
1 tsp vanilla
1 cup flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup strawberries, finely chopped (approx. 5 strawberries)
3/4 cup cantaloupe, pureed

Cream Cheese Frosting:
8 oz cream cheese
2 tbsp butter
1 1/2 cups confectioner's sugar
1 tsp cantaloupe juice
1/4 tsp salt
food coloring

1. In a medium-sized bowl, sift together flour, baking powder, baking soda, and salt.
2. In a large mixing bowl, cream the butter and sugar. Add eggs and vanilla until well combined. 
3. Fold in the dry ingredients, strawberries, and cantaloupe in two additions.
4. Add batter to a cupcake pan lined with cupcake liners until 2/3 full. Bake at 350 degrees for 15 minutes, or until a toothpick comes out clean when inserted into the center. Allow to cool completely.
5. For frosting: Combine cream cheese, butter, sugar, vanilla, and salt in a mixing bowl. Fold a few drops of food coloring of each color throughout the bowl but do not mix
6. Spoon the frosting into a piping bag fitted with a 1M frosting tip. Frost cupcakes and if desired, top with sprinkles and fresh fruit. Serve and enjoy! :)
