Turtle Cheesecake Bites

For the past few weeks, I've been selling pies for a choir fundraiser. And just because I can, I chose one of the pies to recreate and write a recipe for. I decided on the Turtle Cheesecake, which I turned into Turtle Cheesecake Bites.

Turtle Cheesecake Bites
12 Oreo cookies, crushed
2 tbsp butter, melted
1 8-oz package cream cheese
1/2 egg
2 tbsp butter
1/4 cup sugar
1/2 tsp vanilla extract
1/4 tsp salt
chopped nuts
chocolate chips
caramel sauce

Line a mini muffin pan with 24 mini muffin liners.

For the crust:
Crush the Oreo cookies and mix with melted butter. Pack approximately 1 tsp at the bottom of each muffin liner. Bake at 350 degrees F for 10 minutes. Allow to cool.

For the cheesecake:
In a large bowl, beat the cream cheese, butter, vanilla extract, sugar, and salt. Add egg. Do not over-mix.
Spoon the cheesecake batter into each paper liner, 3/4 full. Bake at 350 degrees F for 20 minutes.
Allow cheesecake to cool. Meanwhile, make caramel sauce using the recipe below.

For the topping:
Sprinkle chopped nuts over the cheesecake. Fill a plastic bag with caramel sauce and cut the corner off. Pipe the chocolate and caramel sauce over the cheesecake. Top with chocolate chips. Serve.

Caramel Sauce
1/2 cup brown sugar, packed
1 tbsp butter
3 tbsp heavy cream
1/4 tsp sea salt
1/2 tbsp vanilla extract

In a small saucepan, whisk brown sugar, butter, heavy cream, and salt; bring to a boil.
Reduce heat and simmer for 5 minutes, stirring slowly.
Add vanilla extract and continue to simmer for a few minutes. Remove from heat and allow to cool. 
Store in refrigerator.
