Peach Yogurt Muffins

At this time of year, peaches are starting to grow out of season, and the leftover peaches picked are going overripe. For those of you who aren't a big fan of soft peaches, a good way to get rid of them is to put them in a delicious muffin! 

Peach Yogurt Muffins

1 1/2 cups flour
3/4 cup sugar
1 1/2 tsp baking powder
1 tsp baking soda
2 small peaches, washed, peeled, cored, diced
1/2 cup vanilla yogurt
1/2 cup oil

In a large bowl, sift together the flour, sugar, baking powder, and baking soda.
Alternate mixing in prepared peaches, oil, and yogurt until just combined.
Line muffin pan with 12 paper liners. Fill each liner just over half full. 
Bake at 350 degrees F for 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool 10 minutes. Serve, and enjoy!

Note: If you don't have vanilla yogurt, you can use 1/2 cup plain yogurt with 1 1/2 tsp vanilla extract.
