Peanut Butter and Chocolate Cookie Cups

These cookie cups both look and taste delicious and professional. They're the most requested baked good I've ever made. 

Even better, they're perfect for a party or potluck - it won't take long to make more than enough for everyone; just one batch makes 50 cookie cups! 


Whenever I make these, I have to let someone else be the taste-tester - if I try them, I get addicted and end up eating all fifty... (Just kidding. Sort of.)

Step 1: Make the chocolate chip cookie batter.

Chocolate Chip Cookies


Ingredients

2 1/4 cups all-purpose flour
1 tsp baking soda
2 sticks butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 tsp vanilla extract
2 large eggs
chocolate chips

Directions

Sift together flour and baking soda in a small bowl. In a separate bowl, beat the butter, sugars, and vanilla extract until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate chips.

Step 2: Drop the batter into paper-lined mini muffin pans. Makes about 50.


Immediately after baking, use the round end of a utensil to make indents in the center of each cookie cup.

Step 3: Add the filling.

Fill a large microwavable Ziplock bag with 1 cup of chocolate chips and 1 cup of peanut butter and chocolate chips (available by Nestle). Microwave at 20 second intervals, pressing and mixing the chocolate with your fingers through the bag in between each. 

When completely melted and mixed, snip the corner of the bag. Pipe the filling into each cookie cup. 

Step 4: Allow to harden.

Refrigerate if needed.
