Baking Breakfast: Banana Crumb Muffins

Sprinkling a brown sugar-cinnamon topping creates the perfect finish to these delicious Banana Crumb Muffins!

Banana Crumb Muffins

1 1/2 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 bananas, mashed
3/4 cup white sugar
1 large egg
1/3 cup butter

2/3 cup packed brown sugar
4 tbsp all purpose flour
1/4 tsp ground cinnamon
2 tbsp butter

In a large bowl, sift together flour, baking soda, baking powder, and salt. 
In another bowl, cream butter and sugar together. Beat in egg. Mix in mashed bananas. Spoon batter into 12 muffin liners.
In a small bowl, mix together brown sugar, flour, and cinnamon. Cut in butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
Bake at 350 degrees F for 20 minutes, or until a toothpick inserted into center of a muffin comes out clean.
