Healthy Chocolate-Oat Energy Bars

I've just finished my first full week of school, and I'm already exhausted by it all! Of course it's been fun -- I love all my classes and teachers, and I had a lot of fun this week hanging out with friends I haven't seen all summer, as well as auditioning for plays and singing groups! 
But could we do all that minus the waking-up-early part?

Summer 2013 Baking Party #7: The Last - Peach Upside-Down Cake & Cheesecake Cups

Summer is ending in 8 days! 

Not actually -- technically summer ends on September 21, the day before the fall equinox, but there isn't going to be much time to enjoy it once school starts. So that is why I've been trying to have as many baking parties as possible before summer ends (and somehow leave enough time to do my summer homework).

Peaches are in season, and Nysha and I haven't made any form of cheesecake yet, so Peach Upside-Down Cake and Cheesecake Cups it is!



I'm actually very impressed by these two recipes. I got raving reviews for both these desserts from my family (which, if you don't know, is HUGE).
Plus, I don't even like peaches! But now after this, I think I do...

Baking Party! - Carrot Cupcakes, Apple Turnovers, & Make-Your-Own Mini Pizzas

Today was a great day! I finally got to have a baking (and cooking) party with two of my friends, Jeffrey and Michael.

After spending a good hour circling the grocery store, we went over to Jeffrey's house.

Here is a list of everything we planned to make:

1. Carrot Cupcakes
2. Apple Turnovers
3. Mini Pizzas
4. Alfredo Pasta
5. Pasta Salad
6. Mini Ruffle Cakes

You should be able to tell which are mine and which are Michael's...(Just kidding, they're all beautiful)

Yes, it's a lot.
Unfortunately, the mini ruffle cakes did not make the final cut. :(

Peanut Butter and Chocolate Cookie Cups

These cookie cups both look and taste delicious and professional. They're the most requested baked good I've ever made. 

Even better, they're perfect for a party or potluck - it won't take long to make more than enough for everyone; just one batch makes 50 cookie cups! 


Whenever I make these, I have to let someone else be the taste-tester - if I try them, I get addicted and end up eating all fifty... (Just kidding. Sort of.)

Creative Cake Mix-ing - Fudge Brownie Pops

This is the beginning of a new type of post that will appear on my blog - called Creative Cake Mix-ing. Here, I'll show you how to make delicious treats out of basic cake mixes. Today, that treat is the Fudge Brownie Pop.

Last Christmas, my family was generously gifted with lots of delicious cake mixes by King Arthur Flour. I loved the Cranberry Orange Muffins mix, but the one I really fell in love with were the Fabulous Fudge Brownie Mix.
