It's my favorite time of year. With the excitement of school ending in less than two weeks, I can't wait to start sleeping in, going to the beach, reading, volunteering, and of course, bake. Summer is just around the corner!

Banana Split Cake Bites

It's been a while since I've been so excited to share a new recipe here! I can't get enough of these Banana Split Bites. They are the perfect dessert with their small size, healthy element, and popping flavors. Together, each component creates a delicious combination that satisfies both my cake and ice cream cravings. Banana Cream Loaf

Hello everyone! This is my first post of 2014--how exciting! With the new year, I'm ready to try more new and creative things with my blog, writing new recipes, exploring other foods. And the first new thing I'm trying is...
Making bread!

Yes, I know it's not very exciting, but I just got a new loaf pan for Christmas and I couldn't wait to try it out.
(Actually, let me correct myself there. While Christmas shopping online, I bought myself a new loaf pan. Come on, don't tell me you don't gift yourself once in a while, too.)



The pan I got is called a Wilton Recipe Right Medium Loaf Pan. It's dimensions are 8.5 x 4.5 x 2.5. You can buy one here.
The pan wasn't pricey at all, and I can say from past experience that I trust the quality of Wilton's products. It's color is a nice light gray, and it's very sturdy yet light-weight. 
They are also sold in various sizes (medium, mini, petite, standard). The medium and standard sizes work great for making loaves, the only difference being the size you want. The mini and petite sizes would work great for making mini cakes, or pieces of cornbread. 


The great thing about making banana bread is that the fruit doesn't necessarily need to be perfect. Actually, in some cases, overripe bananas are preferable in baked goods, because it is easier to mash and makes the bread taste sweeter. Baking banana bread is a great way to get rid of old bananas.

This banana bread is just what my family and I needed on this cold winter day. It's warm, soft, and rich, and we can fully enjoy it knowing it's good for us. :D
